Your loafs volume may not be as big using AP flour compared to bread flour. Im using ap flour. I will be telling my bread baking friends about this product! My husband and our family love it. Rye flour is very low in gluten, so bread flour is needed to compensate for this. I played with sourdough starter years ago. I havent tried that. What size is the dutch oven you are using? 1 Tablespoon of SALT is too much! Set the prepared loaf in a warm place, cover, and allow to rise again until approximately one inch above the top of the pan. This will take from 5-8 minutes. So far Ive made 2 loaves in my bread maker that has a history of making excellent bread and following the simple directions on the package and so far both loaves have fallen in on top. Like homemade Greek yogurt, there must be a million ways to make sourdough bread and plenty of people willing to tell you how. Ive got one more package to try but frankly Im a little nervous about wasting more flour. Starting with cold flour or water is a common cause of denseness because it slows down the rising time. If your store doesnt carry it yet, make sure you request it with the grocery manager.
